Great bread...great concept...great book
A wonderful book with a somewhat novel approach to breadmaking. All the flavor and simplicity of sourdough without the time and trouble. Need a small loaf for 2? Pinch it. Need loaves to feed the multitudes? Grab a handful and make 3 loaves! Crispy, european quality bread. Almost all the flavors can be made from the same starter. Ignore the 'non-airtight' comment about the container; use a storage bin with a snug but not 'burping' lid. Avoid A1 books.
