| Bacon curls while frying, making it difficult to cook evenly. Long ago, cooks found a simple solution to this problem: hold bacon to its proper shape by flattening it with a heavy, cast-iron press. Norpro's press hews to that tradition. It's made of traditional cast iron and has a wooden handle that stays cool while the press is in use. For speeding up the bacon-frying process, the press can be preheated--also preheat it when you're flattening hamburgers, grilled sandwiches, or quesadillas. Season the press by coating it with oil and heating it for 20 minutes; after cleaning it in soapy water, it should also be lightly coated with vegetable oil to prevent rust. |
