In the last decade, veganism has moved into the mainstream as home cooks seek out healthy, fresh, economical, and environmentally sustainable foods. Omnivorous author Devra Gartensteins pioneering classic vegan cookbook, first published in 2000, gets a timely make-over with 20 new recipes, simplified instructions, and a focus on fresh and local ingredients. THE ACCIDENTAL VEGAN includes appetizers, soups, mains, sides, and desserts inspired by Indian, Thai, Chinese, Middle Eastern, Mexican, and Italian cuisine. And with Devras special brand of simplified instructions and no-fuss ingredients, even accidental chefs will be able to whip up this healthy fare.
From the Publisher:
Eating vegan doesn't have to be hard. These days, home cooks are seeking out simple recipes that unite hearty, satisfying taste with the perks of vegan food--it's healthy, fresh, economical, lactose-free, ethical, and environmentally sustainable. Omnivorous chef Devra Gartenstein accidentally fell into the vegan world more than ten years ago, and she stuck around for the benefits to her body, her tastebuds, and the world around her. Never one to fuss in the kitchen, Devra has packed this new edition of her pioneering cookbook with more than 180 basic-ingredient, quick-instruction, maximum-flavor recipes. With appetizers, soups, mains, sides, and desserts inspired by Indian, Thai, Chinese, Middle Eastern, Mexican, Greek, and Italian cuisines, THE ACCIDENTAL VEGAN is sure to have vegans and nonvegans alike clamoring for more.
Annotation:
Devra Gartenstein succeeds in proving that vegan cooking does not have to be blah--that it can have taste and variety. Creativity with ingredients and an openness to international dishes make this cookbook stand out. Gartenstein tells how she happened to get a job in a health food store when she was just out of college, and later started a catering business that included vegetarian food. When she saw how well her vegan dishes sold, she started her Seattle-based, all-vegan catering business. THE ACCIDENTAL VEGAN includes simple recipes for appetizer staples such as hummus, babaganoush, and eggrolls. Soups include miso-noodle, hot and sour, and borscht. Her main dishes include Pad Thai, various curries, and an outstanding Greek lasagna. (For dessert, try her baklava!) Gartenstein promotes the meat substitute seitan, which she prefers over tofu, and provides several familiar recipes, such as pepper steak, that can be made with meat replacements. Gartenstein's commentary is minimal but filled with ideas and tips. Her motive is to change the way people eat so that they will be more health conscious, and she knows that, to do this, people need ideas and recipes like the ones in THE ACCIDENTAL VEGAN.
