When she saw how well her vegan dishes sold, she started her Seattle-based, all-vegan catering business. THE ACCIDENTAL VEGAN includes simple recipes for appetizer staples such as hummus, babaganoush, and eggrolls. Soups include miso-noodle, hot and sour, and borscht. Her main dishes include Pad Thai, various curries, and an outstanding Greek lasagna. (For dessert, try her baklava!)
